Check out this Oreo Cake for ONE!
🔸30g protein powder (I used PEScience “Cookies ‘n cream” flavor)
🔹10g coconut flour
🔸10g black cocoa baking powder (can also use unsweetened cocoa powder)
🔹1/2 tsp baking powder
🔸30g unsweetened applesauce
🔹70g liquid egg whites
🔸90ml unsweetened cashew milk
🔹0-cal sweetener to taste (I used liquid stevia)
🔹100g Greek yogurt (0% fat/plain)
🔸15g protein powder
🔹8g sf/ff vanilla pudding mix
🔸0-cal sweetener to taste
1] Pre-heat your oven to 400°F. Mix all ingredients in a bowl until you get a thick batter consistency. Spray 3 mini cheesecake pans with 0-cal cooking spray. Distribute batter evenly among your 3 mini cheesecake pans. Place in oven and bake for 10 minutes.
2] While your cake is baking, whip up your frosting by adding all ingredients to a bowl, except for the cashew milk. Start mixing (hand mixer works best) and slowly add cashew milk a little at a time until you get a frosting like consistency. Place in freezer to set and thicken up.
3] Once your cakes are done baking, let sit for 10 minutes then place in the refrigerator for another 10-15 minutes to cool down (we don’t want the warm cake to melt the frosting when spreading it on).
4] Once your cakes have cooled down, take them out of the refrigerator and grab your frosting from the freezer. Begin layering the cakes with your frosting. Then cover the rest of your cake with your frosting. Add sprinkles or even some crushed Oreos to top it off!
5] Dive in and devour, guilt free!
