This is a great alternative to roasted sweet potato if you are on lower calories or just want to add in more VOLUME to your meals and in your tummy.
100 grams of sweet potato:
Carbs- 27 grams
100 grams of Kabocha squash:
Carbs- 13 grams
As you can see, Kabocha squash is about half the amount of calories and carbs as sweet potato for the same amount of volume. Put another way, you could have DOUBLE the amount of Kabocha squash for the same amount of calories as a 100 gram serving of sweet potato. And I’m a FAN OF THAT!
ROASTED KABOCHA SQUASH:
-Sliced/cubed Kabocha Squash
-Pam coconut oil spray
Preheat oven to 375 F. Cut squash up into slices or cubes. Line a baking pan with aluminum foil and spray it with Pam coconut oil cooking spray. Spread your Kabocha squash evenly on the pan. Spray the top of them with cooking spray. Sprinkle the squash with cinnamon and garlic powder. Toss them in the oven for 30 minutes or so. You can flip them halfway through if you want, but I find it doesn’t make a huge difference either way.
**PRO TIP** –> for the last minute of baking them, put your oven on the “broil” setting. Be careful to only leave them on broil for about a minute and not longer. This will get them nice and roasted/crispy.
Take em out and they are ready to devour!
You can either have them sweet or savory.
Sweet: mix up some PB2 (powdered peanut butter/water) to drizzle over the top for a sweet side.
Savory: dip them in reduced sugar ketchup!
